Bagnet, Ilocandia’s pride…and sin?

Chicharon, lechon kawali, bagnet. They belong to one food category –  malutong na piniritong baboy. Noong tumira ako sa Cali, madalas akong magkaroon ng craving  sa chicharon. Nag-suffer ako kasi 30-minute drive pa ang pinakamalapit na Filipino store kung saan sigurado, syento por syento, may tindang chicharon na galing sa Pinas.

Sa Ralph’s na malapit sa amin, meron silang chicharon-like food  na  gawa ng Mexicans. Pork crackling ang tawag nila. It almost looked like our chicharon but it’s not the same. Hindi ko siya mapagtiyagaan. Iba talaga ang chicharong Pinoy.

Isa pang nakakaloka sa sarap pero mahirap hanapin at lalong mahirap gawin ay ang pride ng Ilocandia, ang bagnet. It’s the ultimate in chicharon goodness, the extreme lechon kawali. Therefore, ultimate din siya sa cholesterol hehe👿

Medyo labor intensive din ang pagluluto ng bagnet so I get my supply sa Saturday market ng Salcedo Village sa Makati. A medium sized slab of authentic bagnet from Ilocano vendors costs about P250. I cut it up in small pieces and then refry for pakbet, ginisang munggo or serve it as lechon kawali.

Hindi na ako laging nakakapunta sa Makati ngayon kaya tumitindi ang pagnanasa ko sa bagnet lately. Last week, I was driving along Tomas Morato when lo and behold,  ano ang tumambad sa mga mata ko? Bagneeeet!

Well, okey,  hindi po siya malaking bagnet na nakatambay sa gitna ng bangketa pero nakita ko ang i Republik, an Ilocandia restaurant na kilala sa kanyang authentic Ilocano dishes. Ilocano food equals bagnet. Food logic ko po ‘yon hehe.

So, biglang parada ang Ella, sabay parang isang buwan nang hindi kumakain na sumugod sa loob ng restawran, at walang pakundangang umorder ng mga ulam na may picture ng bagnet sa menu LOLz. Huli na nang ma-realize kong dalawa lang pala kami ni Ana nyahaha!😆

And of course, The Ilocano version of tokwa't baboy - tokwa at bagnet. Jeez,  to die for ito.

I must have  my fix of seafood at naintriga ako kung ano ang claypot nila, so I got All seafood claypot rice. Parang malapot na arroz caldo with shellfish, shrimps, squid, fish, etc. thrown in. Interesting P295

Palagay ko nahulaan ‘nyo na na ang dami naming pinabalot at inuwi kay ama. Napagalitan na naman kami ni Ana sa sobrang kasibaan namin hehe😛

  2. what the heck?!!!!! this doesn’t help me at all. I tried to loose some weight, yet your food looks soooo good! Decision, decision, decision. Either I’ll abandon my diet, or just ignore it for once and enjoy. Pwede na ring magtulo laway na lang ako. ANGSAKLAP!

    Naku, mag-enjoy ka! Ipawis mo na lang ‘yan pagkatapos. Sabi nga ng mga fitness gurus, EAT BUT EXERCISE! Yun nga lang nakakatamad mag-ehersisyo.
